Vibrant and precise, the 2025 Estate Grown Dry Bacchus is crafted to showcase the aromatic potential of this unique varietal while maintaining a clean, refreshing structure. Grown on our estate vineyards in the Fraser Valley, this vintage leans toward a drier, mineral-driven style while still offering the expressive aromatics Bacchus is known for.
Winemaker Notes
Brief skin contact enhances aromatic intensity and texture, followed by a slow, cool fermentation to preserve delicate fruit character. A short period of lees aging builds subtle weight on the palate without sacrificing freshness
Food Pairing Notes
Pairs extremely well with fresh goats cheese/salads, seafood, (especially sashimi & sushi), lightly seasoned, poached or grilled salmon, and spring vegetables .
